Synthesis / Manufacturing Process of Protein Hydrolysate
Enzymatic digestion of defatted soybean meal. Protein concentration is achieved by removing soluble non-protein compounds, which are mainly soluble carbohydrates, some nitrogenous substances, and minerals. This process eliminates undesirable beany flavor and oligosaccharides (raffinose and stachyose). The product is spray-dried, with the manufacturing process performed under controlled conditions to prevent bacterial contamination.
