Synthesis / Manufacturing Process of Soya Protein Hydrolysate
Soya Protein Hydrolysate is manufactured by the enzymatic digestion of defatted soybean meal. The protein concentration is increased by removing most of the soluble non-protein compounds, which are primarily soluble carbohydrates, some nitrogenous substances, and minerals. This process also removes the undesirable beany flavor and oligosaccharides (raffinose and stachyose). The product is spray-dried, and its manufacturing process is carried out under controlled conditions to prevent bacterial contamination.
