Information on Papain

Papain, also known as “Papaya Proteinese,” is a Cysteine Protease enzyme found in Papaya. It is a single-chained polypeptide with three disulfide bridges and a sulphohydryl group essential for the enzyme’s activity.

Synthesis / Manufacturing Process of Papain

Papain is produced from plant latex. The latex is quickly processed to restore its enzymatic activity, and the resulting product is spray-dried to achieve the desired result. The process is carried out under controlled conditions to prevent bacterial contamination.

  • Odour: Typical Papain Odour.

  • pH: 4.5-6.5.
