Information on Hydrolyzed Animal Protein (HAP)
HAP is a “flavor enhancer” used in processed foods such as soups, chili, sauces, gravies, stews, potato chips, and pretzels. It is a protein derived from various animal sources, such as a selected blend of fish. HAP is a fine, free-flowing, spray-dried powder derived from selected fish. It is a light yellow to golden brown liquid with a typical meaty flavor. HAP should be packed in tightly closed containers.
Synthesis / Manufacturing Process of Hydrolyzed Animal Protein (HAP)
HAP is produced by boiling foods in hydrochloric acid and then neutralizing the solution with sodium hydroxide. The process is carried out in controlled conditions to prevent bacterial contamination.
